Iodine molecules are small enough to diffuse from the region of higher concentration (outside) into the Visking tubing. Inside, the iodine reacts with the starch in the banana paste, turning the solution blue-black. Starch molecules are too large to diffuse out of the Visking tubing, so the iodine solution outside remains yellow-brown.
