Epimerisation is a chemical process in which one epimer is converted into another. This involves the inversion of configuration at a single chiral center in a molecule that has multiple chiral centers, resulting in the formation of a diastereomer that differs only at that specific chiral carbon.

For example, the interconversion between D-glucose and D-mannose (epimers at C-2) is an epimerisation reaction.
